So, twice a year for Christmas and Chinese New Years, I have to make hundreds of them. Gosh, I wished that they would open their minds or taste buds so I can experiment with different flavors. The almonds should not become a paste. You can try grinding the almonds together with the icing/confectioner's sugar that is required in your recipe.
